Ingredients
- 1 lbs salmon fillet
- Dash Salt
- Dash Pepper
- Dried italian herbs (rosemary, oregano, thyme, garlic, red pepper flakes)
- ¾ cup whole wheat couscous
- ½ cup greek fat-free yogurt
- 1-2 tbsp crumpled feta
- 1 tbsp capers
- Small bunch parsley chopped
- 1 extra-large egg
- ½ – 3/4 cup chopped bell peppers (different colored one look pretty)
- ½ cup chopped onion or shallots
- Dash of Worcestershire sauce
- 2-3 tablespoons panko bread crumbs (optional)

Sprinkle salmon fillets with salt pepper and herbs bake at 350 F until fish just flakes. Cooking time depends on the thickness of the fish, it could be anywhere from 5-20 minutes. |

3. Sauté chopped vegetables with parsley and capers and a dash of Worcestershire sauce until vegetables are just soft. cool

Mix yogurt, cheese, couscous, egg and sauteed veggies. |

Form cake-lets and refrigerate for half an hour or more. |

Sprinkle with panko crumbs and broil for 2-5 minutes/per side till they turn golden |

Hi, I made the cakelets today. Everybody loved them. One question, did I have to cook the couscous before mixing, I did not, some parts were crunchy, but, still,it was a hit. Thank you very much, Larisa.
Hi, Sofya, no I didnt cook the cous cous, the veggis and yogurt proveded enough liquid for it to absorb, and it wasn’t crunchy.
